Oh How I Love A Good Pasta Sauce!!
If you have been keeping up with my blog, you should know how much I love italian food (Lasagna)
Well since then I have become a Vegetarian (working my way to Vegan) and well.. I’m a true lover of good food, I have decided to make a meatless pasta sauce that is beyond amazing!!!
1 med sweet onion chopped
1 whole green pepper sliced
1 whole red pepper sliced
1 whole orange pepper sliced
1 cup chopped mushrooms
1 bag of fresh spinach
2 cloves garlic, crushed
The Meatless Meat
1 Package of Field Roast Smoked Apple Sage Sausages
2 (28 ounce) can diced tomatoes
2 Jars of Classico tomato Sauce (1 jar fire roasted tomato & 1 jar sweet basil)
1/2 Jar of Classico (sun-dried tomato pesto)
2 teaspoon Italian seasoning
1 teaspoon seasoned pepper
4 tablespoons chopped fresh parsley
2 teaspoons oregano
Trader Joes brown rice and quinoa spaghetti pasta
NOW LETS GET STARTED!!
This is the meatless sausage that was used for this recipe. I’m usually not a fan of wannabe meat, but I remember how much I loved this sausage when I was a vegetarian years ago. And boy was I right!!
Slice your sausage and lightly brown for 3 min on both sides. Remove the sausage, wipe your pan cleans. In the same pan
Sautee your onions in olive oil for around 8 min
After slicing your beautiful peppers, add them to the pan with the onions
While your onions and peppers are cooking, slice your mushrooms and add them to the pan
Add your garlic to the pan last (garlic can sometimes burn when just cooked in oil)
Add both cans of tomatoes, both jars of pasta sauce and a half jar of sun dried tomato pesto
Add your seasonings and fresh herbs & stir
Last add your sausage back into your delicious sauce and let it cook on low for 45 min
This is a great italian sauce to use for any of your pasta dishes or over Spaghetti Squash, Zucchini Lasagna, or over any of your favorite pasta noodle
